Honey Walnut Wheat Bread

Homemade honey walnut wheat bread! Easy, delicious, healthy & budget friendly.

Makes: 1 loaf 

Ingredients:
2 c flour (all purpose or bread)
2 tsp yeast
1 1/2 tsp salt
1 c water
4 Tbsp honey
2 Tbsp vegetable oil
1/2 c old fashioned oats
1 c whole wheat flour
1/2 c walnuts, chopped
Topping: 1 duck egg, 1 tsp oats and 1/4 tsp poppy seeds


Directions:
In your mixing bowl, stir together regular flour, yeast and salt.

In a microwave safe bowl or measuring cup, microwave in 15 second increments the water, honey, vegetable oil and oats until very warm to the touch (not hot).

Add the wet ingredients to the dry. Mix for 3 minutes (use the dough hook on your mixer and push down occasionally with a spatula).

Add the walnuts. 1/4 cup at a time add the whole wheat flour. Kneed for 5-8 minutes until the dough is smooth and elastic.

Lightly oil the outside of the dough ball. Put back in the bowl and cover. Allow to rest for 15 minutes.

On a lightly floured surface, punch down the dough to get out any air bubbles. Flatten the dough into a 14x7” rectangle. Then tightly roll the dough into a loaf, starting at the shorter end. Put into an oiled 9x5” bread pan. Cover and allow to rise for 1 hour. After a half hour of the rise, preheat the oven to 375°F.

The bread is ready to bake when you can push your thumb into the dough and it doesn’t spring back immediately.

Whisk the duck egg and brush onto the top of the risen loaf. Sprinkle with oats and poppy seeds.

Bake at 375°F for 30-35 minutes. The edges will be pulling away from the loaf pan and it will sound hollow if you tap on the top.

Allow to cool for at least 10 minutes before transferring to a wire rack to cool completely. It will be very soft but able to be cut after about 15 minutes.
