Pound Cake
Simple pound cake two ways - dress it up with icing and berries or keep it easy and delicious.
Ingredients:
1 c butter, softened
1 c sugar
3 duck eggs
1/2 c sour cream
1 Tbsp vanilla
1 tsp salt
1 1/2 c flour
1/2 tsp baking powder
To make the bundt cake, double the above measurements.
Cream cheese frosting:
1/4 c (2 oz) cream cheese
6 Tbsp butter (softened)
1/4 c milk
1/2 tsp vanilla
1 drop food coloring (until you get to the color you want)
1 1/2 c powdered sugar
1/8 tsp salt
Directions:
Beat together sugar and butter until fluffy. Beat in eggs until combined. Mix in sour cream and vanilla. Add dry ingredients and mix until just combined. For best results, scrape down the sides of the bowl with a spatula at each step so that everything is incorporated evenly.
My favorite addition: mash and add fresh or frozen raspberries to the batter!
Grease a 9x5” loaf pan or your bundt pan with a generous amount of room temperature butter. Pour in the batter and smooth the top with a spatula.
Bake at 350°F for 40-50 min until the middle is set and a toothpick comes out clean.
Allow to cool for 10 minutes before transferring to a wire cooling rack.
Enjoy with coffee, tea, champagne, apple juice or whatever the occasion calls for!
